Combine red pepper, tomatoes, eggs and avocado with spicy nduja paste to make this easy brunch for four. Serve with crusty sourdough bread for dipping

Heat a small non-stick frying pan over a medium heat, fry the M&S nduja paste and garlic for 1 minute then add the pepper and cook for a further 3-5 mins until softened.
Add the chopped tomatoes. Season with salt and pepper, cook for 8-10 mins until you have a fairly thick sauce. Make 4 wells in the sauce with a spoon, crack an egg into each and then cover with a lid or foil and cook for 5-8 minutes until the whites are just set.
Scatter over the parsley and diced avocado and serve with crusty sourdough bread to dip.
