Points to remember:

  1. Start by removing the leaves from the whole cauliflower.
  2. Cut off the base of the root then chop the cauliflower into chunks.
  3. Blitz into fine pieces in a food processor or, if you don’t have a food processor, you can use a grater.
  4. To cook your cauliflower in the oven, spread out evenly on a large baking tray. Drizzle with olive oil and roast for 12 minutes at 200C/180C fan/gas 6, turning half way through.
