Next level quesadilla pizza

Points to remember:

• Heat oven 200C/180C fan/gas 6. Sandwich 2 flour tortillas together with 1 x 435g can refried beans and a handful grated mozzarella. Put on a baking sheet and top with handful chopped cherry tomatoes, few pieces chopped chorizo and another handful grated mozzarella. Scatter over few pickled jalapeno slices, drizzle with olive oil and bake for 20 mins. Garnish with 1 avocado, sliced, and some fresh coriander.
