  • 500g mushrooms, finely chopped
  • 90g butter
  • 2 medium onions, chopped
  • 1 clove garlic, crushed
  • 2 tablespoons plain flour
  • 1 lt hot chicken stock
  • 1 bay leaf
  • 4 tablespoons cream
  • Salt and pepper

Method

  • step 1

    Heat butter, cook garlic and onions until soft but not browned
  • step 2

    Add mushrooms, cook over high heat for 3 mins
  • step 3

    Sprinkle flour over mushrooms, mix well
  • step 4

    Pour in hot chicken stock, bring to boil, add bay leaf and simmer for 10 minutes
  • step 5

    Remove bay leaf, leave to cool, blend. Reheat and mix with cream or freeze
