Originally from Lebanon, but now popular throughout the Middle East, tabbouleh is a salad made from bulghur wheat (tender, chewy wheat kernels that have been steamed, dried and crushed), tomatoes, onion, parsley, mint, olive oil and lemon juice. It is served cold with a crisp bread or sometimes with cos lettuce leaves, which are used to scoop it up.
Bulghur wheat can be found in boxes or bags in supermarkets, health food shops and delis.
